Don't Kale my Vibe

This is one of my favorite ways to eat Kale! It’s super refreshing & quick to prepare!

Here’s what to do:

1: Remove leaves from stalks. Hold the thick end of the stalk while pulling the leaves off in an opposite motion.

2: Roll out lemon & cut in half. Rolling the lemon allows the juice capsules to open up.

3: Squeeze lemon on Kale.

4: Toss Kale in lemon juice. Tossing raw Kale in fresh lemon juice cuts the bitterness and brightens the color & flavor!

While the kale marinates in the lemon juice, cut up your favorite veggies to throw in there! Today I added zucchini, carrots, and tomatoes with an olive oil & balsamic dressing!
