Simple & Fast Chicken Recipe

There are times (well, a lot of the time) where I just don’t want to spend so much time preparing and cooking dinner, especially after a long day. One of my go to recipes is super simple & easy. If you are a meat eater then this recipe is perfect for you! I always buy boneless, skinless chicken thighs because they are always juicy and much more flavorful. You can choose whichever cut of chicken you like, but the cook times will vary. Here’s the recipe:

  • 6-8 boneless, skinless chicken thighs (preferably organic with no added hormones, no preservatives, no antibiotics, etc.)

  • Approx 1 tsp of each spice: garlic powder, onion powder, thyme, sage, paprika, salt & pepper

  • Optional: cayenne pepper for spiciness

You can add more of each spice if you’d like. I usually freehand all the spices because I have a general sense of how much my tastebuds prefer.

  1. Preheat oven to 425. Spray or spread an oil of your choice in the baking dish.

  2. Place raw chicken in baking dish.

  3. Combine all the spices into a small bowl, mix up, and sprinkle onto chicken evenly.

  4. Place in oven and cook for 25-30 minutes.

  5. If chicken does not look cooked thoroughly, put it back in oven for an extra 5 minutes and check again. Repeat if necessary.

While the chicken is cooking, a quick salad can be prepared easily, or even some quinoa, rice, cooked veggies, raw veggies.

Eating healthy can always seem daunting because some may think it takes a lot of time and effort to prepare and cook meals. But honestly, it really doesn’t have to be hard or time consuming. This recipe takes 5 minutes to prep, 25-30 min to cook, and while it’s in the oven you can quickly prepare the sides!
